Head Chef at Koi Rob Lucas is giving 'Extra' his secret to success, the recipes to some of his most popular sushi dishes!
Add crab meat mixed with a little mayo ,insert cucumber and avocado. Roll firmly into a roll. Next add some fish on top of the roll, tuna , salmon, yellowtail and halibut. Cover with Saran wrap and cut into 8 pieces.
Chop yellowtail into small dices, then mix in smelt eggs, sesame chili oil, siraracha, green onions , mayo and tempura flakes.. Serve this on either fried wonton chips or fried potato chips. Garnish with some mixed greens!
